Migas with eggs

Ingredients
- 3 large eggs
- 3 corn tortillas, cut into short strips
- 2 tbsp neutral oil
- ½ onion, diced
- ½ green pepper, diced
- ½ jalapeño, chopped, optional
- 30 g grated cheese
- ¼ tsp salt
Method
Crisp tortillas
Heat oil over moderate heat. Fry tortilla strips for 3–4 minutes, turning until crisp. Lift half out for the topping.
Look for: The strips are golden and stiff at the edges.
Soften vegetables
Add onion, pepper and optional jalapeño to the pan. Cook for 5 minutes, stirring.
Look for: The onion becomes translucent.
Add beaten eggs
Beat eggs with salt. Lower heat and pour into the pan. Fold slowly until no liquid egg remains, about 2–3 minutes.
Look for: Set curds surround the tortilla pieces.
Finish
Fold in cheese and scatter over reserved crisp strips. Serve immediately.
Look for: Some strips stay crunchy above the soft egg.

On induction, start with low-to-moderate power and watch the oil; avoid boost. Gas also works: keep the flame beneath the base. On electric, move the pan to a cool ring if the egg sets faster than you can work. The oil should move freely without smoking.
